Simple, natural and clean

If you’re anything like me I always need a post workout snack. If it’s not a Greek yogurt then it’s usually a Kind Bar. But every once in a while my sweet tooth gets the best of me. That’s why I decided to make these monster cookie dough energy bites.

Monster Cookie Dough Energy Bites are made with ground up peanuts, peanut butter, rolled oats, flax seed, coconut oil, maple syrup and vanilla. Nice and healthy. Of course I had to go and ruin things by adding mini chocolate chips and mini M&Ms, but like I said, I’ve got a pretty big sweet tooth.

All you need to do is toss the dry ingredients in a food processor, give it a whirl and then fold in the remaining ingredients. I rolled mine into little balls, similar to truffles or cookie dough before it gets baked, and then stored them in the refrigerator.

They tasted great and made me feel a lot less guilty about eating a treat after working out. I can’t wait to experiment with other nuts and flavor combos – the options seem endless!

GRIND. Place the dry roasted peanuts, oats and flaxseed in the bowl of a food processor. Grind until the nuts are smooth and the oats are relatively fine. Remove and place into a medium size mixing bowl.

COMBINE. Add peanut butter, coconut oil, maple syrup, and vanilla. Stir until combined. Carefully fold in chocolate chips and M&Ms.

CHILL. Store in an airtight container in the refrigerator for up to 5 days.

These Monster Cookie Dough Energy Bites pack a lot of flavor into a little snack and are sure to satisfy your sweet tooth while providing some great protein as well. Here are a few tips when making them:

  • Quick oats can be substituted for the old fashioned oats in this recipe.
  • Use a mini cookie scoop to form the balls of dough, or spray your hands with a little cooking spray to avoid any stickiness.
  • For more protein packed energy bites add a scoop of your favorite protein powder to the ingredients before mixing everything together. If the mixture becomes too dry add in a little extra peanut butter.
  • Place your energy bites onto some waxed or parchment paper before storing to prevent them from sticking to the container.
  • Add in some shredded coconut, raisins, or dried cranberries for some variety.

SERVING: Energy bits can be eaten right away, but are best enjoyed after chilling in the fridge for an hour or two.

STORE in an airtight container in the fridge for up to 5 days.

FREEZE in an airtight container for up to 2 months. Thaw at room temperature or in the fridge to soften a little bit before serving.

Ingredients

  • 2/3 cup old fashioned rolled oats
  • 2 Tbsp flaxseed meal
  • 1/2 cup dry roasted peanuts
  • 1/2 cup natural creamy or chunky peanut butter
  • 2 Tbsp coconut oil - melted
  • 2-3 Tbsp maple syrup (honey or agave)
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips and M&Ms - combined
