Spicy Zucchini Frittata


Summer has come to an end here in Utah and as we’re transitioning into fall I thought I’d share a recipe for the time “in between.” This spicy zucchini frittata is summer and fall all wrapped into one. Our garden is still bursting with veggies. I can’t seem to find enough ways to use all of the jalapenos our plants are growing. That’s when I turned to Yahoo! Food in search of recipe that incorporated both our peppers and loads of zucchini.

Within a few minutes I came across a gallery full of ideas for zucchini. I stumbled upon a recipe for this frittata and knew I had to make it! I have to tell you, Yahoo! Food has quickly become one of my new favorite sites for dinner ideas. You can browse through photos, surprising and sophisticated recipes, stories on the top food trends, the best cooking tools, new techniques, and everything you need to feel inspired. They’ve got an all-star team of editors, including Managing Editor Sarah McColl; former Bon Appetit senior web editor, Julia Bainbridge; Rachel Tepper who joined from Huffington Post Food; and Alex Van Buren, who has written for Bon Appetit, Gourmet, and Martha Stewart Living. She’s scoured the internet and found lots of how-to’s for recipes including: a layered cake, cherry pie, homemade bread and sushi. Yahoo! Food is also partnering with some of the best publishers in the business to bring you their expertise and ideas, including Bon Appetit, Epicurious, Food52, Martha Stewart and more. Today’s recipe comes from the latter.

Spicy Zucchini Frittata

If you’ve never made a frittata before, don’t be afraid! They’re super easy and require minimal effort. We make them a lot because they’re a great way to use up leftover veggies, bacon, sausage and cheese. Plus, they take less than 30 minutes to make!!! All you need to do is get your ingredients chopped up, cooked and then toss it in the oven- so simple!

Since the recipe called for lots of seasonal veggies, I didn’t really want to mess with it a whole bunch. We garnished ours with some bacon and parmesan cheese which really brought out the flavor of the entire dish… it was excellent! One pan and only 25 minutes prep/cook time for a filling meal?! That’s my kind of dinner! Thanks Yahoo! Food :)

Spice up summer with this spicy zucchini frittata! It's loaded with garden fresh squash, jalapeno peppers and corn! A light and delicious way to pack in the protein and the veggies!

Ingredients
  • 2 tbsp. extra-virgin olive oil
  • ½ small red or yellow onion, thinly sliced
  • 1 jalapeno, thinly sliced
  • 1 zucchini or yellow squash, thinly sliced
  • 1 cup fresh corn kernels
  • ½ tsp. salt
  • 8 large eggs
  • Optional garnish: bacon crumbles and parmesan cheese

Notes
-You can garnish the frittata with bacon crumbles and parmesan cheese before broiling, however this is completely optional :)
