Candy Cane Joe-Joe’s Stuffed Chocolate Cookies

Today is reveal day for the 4th Annual Great Food Blogger cookie Swap! I was so excited to be able to participate this year, last year I missed the sign up by just a few days and was so bummed. There were over 500 food bloggers who swapped cookies and helped raise over $12,000 for Cookies For Kids’ Cancer! How awesome is that?! I decided to make a stuffed chocolate cookie. They aren’t your average stuffed cookies though, they’ve got Candy Cane Joe-Joe’s inside!

That’s right, two cookies in one! I used one of my favorite chocolate cookie bases, added a little peppermint extract to it and chilled it so it would really easy to work with. Using a standard size cookie scoop I made balls of dough and then split them in half so that I could encase the candy cane cookie inside. It was sort of like making a stuffed burger, only way more decadent and delicious! Once all of the little “patties” were formed I sprinkled some Andes peppermint baking chips over top. Have you tried them? They’re awesome in cookies, brownies, hot cocoa and so much more! They helped amp up the peppermint flavor which I loved!

All that was left to do was bake them. I have to admit I was a little nervous. This was my first time stuffing a cookie with a cookie so I wasn’t sure how it was going to turn out. I was afraid the dough would just melt around them but it actually held its shape!

We sampled a few of the extras before snapping some pictures, wrapping them up and shipping them to a few foodie friends. I was so happy to hear from the lovely ladies who received them, they were all so kind! I’m already excited for next year!

Rich chocolate cookies stuffed with seasonal Candy Cane Joe-Joe's. That's right, two cookies in one!

Ingredients
  • ½ c. butter, room temperature
  • ½ c. granulated sugar
  • ½ c. brown sugar
  • ½ tsp. vanilla extract
  • ½ tsp. peppermint extract
  • 1 egg
  • 1 c. + 2 tbsp. all-purpose flour
  • ½ c. + 2 tbsp. unsweetened cocoa powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 2 tbsp. milk

  • 18 Peppermint Joe-Joe's

  • ⅓ c. Andes peppermint baking chips
Directions
  1. In the bowl of a stand mixer, combine the butter, sugars and extracts. Beat until light and fluffy, about 2 minutes. With mixing speed on low, add egg and mix until combined.
  2. In a medium size mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. Alternate adding the dry ingredients and the milk, mixing just until combined. Place dough in the refrigerator and chill for 1 hour.*
  3. Preheat oven to 350 degrees. Line baking sheets with parchment paper or baking mats, set aside.
  4. Using a standard size cookie scoop (1.5 tbsp.), create balls of dough. Divide the balls into half and sandwich the Joe-Joe's in between so that half of the dough is on top and half is on the bottom. Pat to seal the cookie inside. Place on prepared cookie sheets and sprinkle with peppermint chips.
  5. Place in the oven to bake for 10-12 minutes, the cookies should be soft but the edges should be set. Remove from the oven and allow to cool for 3-4 minutes before transferring to a wire rack to cool completely.
Notes
*Dough must be chilled in order to handle it. If not, it will be too sticky and will be all over your hands!
