Dark Chocolate Peanut Butter Cup Fudgsicles
I’m totally out of my element today. Guys, I’ve never made homemade popsicles until now. This was my first attempt and success with these tricky little treats. Since I love the combo of chocolate and peanut butter, I really wanted my first popsicle to be something decadent like a these dark chocolate peanut butter cup fudgsicles!
As part of the Peanut Butter & Co’s Yum Squad, I was challenged to use one of their yummy peanut butters in a popsicle recipe. I had so many ideas but finally opted for a version of one of my favorite candies: peanut butter cups. I used their Dark Chocolate Dreams in the base, their Smooth Operator for a peanut butter swirl (p.s. they both can be found at Target) and then chopped up chunks of dark chocolate peanut butter cups. Sounds delicious, right?!
Since I had never really experimented with my mold, I wasn’t quite sure what to do to get the popsicles to release and come out looking perfect. While they may not be the prettiest fudgsicles ever, their flavor totally makes up for it :)
So are you ready to see what goes into these bad boys? The list of ingredients is surprisingly short! The base consists of: dark chocolate peanut butter, granulated sugar, pinch of salt, whole milk and heavy cream. Super simple and straightforward. I heated my mixture on the stovetop until the sugar had dissolved and the mixture became really smooth. If you don’t feel like cooking it you can always process it in a blender, just know that the texture will be slightly different.
I let the mixture cool down a bit and then added the plain peanut butter for the swirl. Using a knife I moved it around so it wouldn’t be in one big clump. As soon as the mixture had cooled to the point where it wouldn’t melt chocolate, I poured it in each mold and then sprinkled the chunks of peanut butter cup into each mold. Again, I used a knife to push them down a bit so they’d be evenly distributed.
After a few hours of freezing I pulled them out and our little family devoured them! They were creamy, chocolatey and most important, full of crazy good peanut butter flavor! I can’t wait to whip up some more popsicles before the summer ends, they’re such a fun, easy & quick treat!
- In a medium saucepan over medium-low heat, add the chocolate peanut butter, sugar, salt, milk and cream. As the mixture heats, whisk until smooth. Turn the heat up to medium and continue cooking until the sugar has dissolved. Remove from the heat and allow to cool for 5-10 minutes.
- Add the smooth peanut butter and swirl with a knife. Let cool for another 5 minutes or so. Pour into the molds and then add in the peanut butter cup chunks. Using a knife, push them down into the mold so that they are evenly distributed.
- Freeze for 30 minutes, then add the popsicle sticks. Freeze for an additional 2-3 hours or until the popsicles are solid and you can remove them without pulling out the stick. You may need to run them under a bit of warm water for an easy release (depending on the mold you have).
- Store individual fudgsicles in a ziploc bag- freeze up to 1 month.
