A combination of fruits and veggies give this fresh and healthy Green Monster Smoothie its tropical taste!
I don’t always have time for breakfast in the mornings. Trying to eat something other than a bowl of cereal is nearly impossible. If I’m lucky we’ll have a loaf of banana bread for me to snack on, but that’s usually only over the weekends. So the other day when I was at the grocery store I decided it was time to fix that. I filled up my cart with fruits and veggies, ones that would freeze well and taste great in smoothies. My first creation was this little green monster smoothie. Don’t let the color scare you, it tastes amazing! It’s loaded with tropical fruit and a handful of spinach. Nothing too weird, right? Good, because I think you’re really going to like it!Now I know you might be thinking, what am I suppose to do with the leftover fruit and spinach that I don’t use? Cut it up, put it in freezer safe bags and you’ll have pre-made smoothie packs ready to go when you need them! Plus frozen fruit will make this Green Monster Smoothie even more thick and delicious!
If you can’t find certain fruits don’t worry, smoothies are always substitution friendly. That’s what I love about them. I used spinach, pineapple, mango, kiwi, granny smith apple, banana, pineapple flavored Greek yogurt and ice. If you like your smoothies on the sweeter side, adding sugar, honey or agave nectar will do the trick. Since I used a flavored Greek yogurt I thought mine was sweet enough. Once you have all of your ingredients prepped, you’ll want to stack them in your blender.I’ve found that one of the best ways to blend is to place the lighter things on the bottom and the heavier items up top, that way the heavier ones force the rest of the ingredients down and into the blades of the blender. Give it a whirl for about 2 minutes or until the spinach is fine. Pour it into a cup and enjoy! I hope you’ll give this recipe a try, I never thought I’d be a huge fan of Green Monster Smoothies, but now I am!
Green Monster Smoothie Recipe
Ingredients
- 1 cup spinach
- 1/2 cup pineapple chunks
- 1/2 mango
- 1 kiwi
- 1/2 granny smith apple
- 1/2 medium banana
- 1/2 cup yogurt
- 1/2 cup ice
Instructions
- Place all ingredients in the bowl of blender, placing the heaviest ones on top. Blend until smooth, about 2 minutes.
NOTES
-I didn't add any sweetener to mine, but sugar, agave or honey can be used.
-I used pineapple greek yogurt in my smoothie which gave it slightly more flavor.
Mmm, I could drink this every morning!! My kids usually stay away from anything “green” but they love this smoothie!
