These quick and easy Biscoff s’mores are a tasty twist on a classic! So easy you’ll wonder why you’ve never thought of it before!!!
Today I’m wrapping up s’mores week with this super easy idea. Yep, I’m calling it an idea because it’s way too simple to be a recipe! I owe it all to my hubby who first suggested a Biscoff version of my Nutella filed s’mores cupcakes. He got me thinking about what else I could use Biscoff cookies for, and then all of the sudden I realized how incredibly delicious they’d be instead of graham crackers! These quick and easy Biscoff s’mores are a tasty twist on a classic!
If you’re anything like me and hoard the cookies that Delta gives you on their flights, you’re going to love these! I’ve discovered that almost all of our local grocery stores now carry sleeves of Biscoff cookies which is good news for all of us non-frequent flyers 😉 I picked up a package or two, ate some and used the rest to make these treats.
First off you need to line a baking sheet with parchment paper to prevent any mallows or chocolate from making a sticky mess. I used my quarter sheet pan for these because they can be packed in tight (no rising=no space needed). Place 12 cookies bottom side up and then break apart your chocolate and place it on top. It doesn’t have to be perfect since it’ll get all melty. Then cut 12 large marshmallows in half (I used my kitchen shears) and adhere the sticky side to the chocolate. 2 halves or 1 marshmallow per cookie.
Turn your oven on broil and toast the marshmallows until they’re puffy and golden brown.
Take them out and place the remaining cookies on top of the mallows. Smoosh them until the chocolate oozes out and you can see the ooey gooey centers of the mallows. Ta-da! You’ve got yourself a pan of oven-baked Biscoff s’mores. Easy right?!
These are definitely going to become a summer staple in our house! Maybe we’ll have to try smearing some Nutella on them. I bet that’d be amazing too! I hope you’ll give these fun little s’mores a try, you won’t ever want to use graham crackers again!
Quick and Easy Biscoff S'mores Recipe
Ingredients
- 24 Biscoff cookies
- 12 large marshmallows
- 6 oz chocolate *
Instructions
- Turn oven on to broil.
- Line a baking sheet with parchment paper and place 12 Biscoff cookies bottom side up.
- Break apart the chocolate and place on the cookies.
- Then cut the marshmallows in half using kitchen shears and place two halves on each cookie (1 mallow per cookie).
- Place in the oven and broil until the tops of the marshmallows become golden brown.
- Remove and place the remaining cookies on top to create s'more sandwiches.
I’m literally obsessed with Biscoff cookies. This is so genius and they look incredibly yummy. I’m going to try these as soon as the Florida weather cools down 🙂

I am so gonna try this newt time when i have guests, as Lotus cookies are so famous here in Belgium and i if i do this i know my guests will be surprised what i did with the lotus biscuits.
i love these lotus biscuits so much.. i usually end up devouring them straight out of the packet! never thought of using them to make smores before, awesome idea and one i have to try!
