Oatmeal Cookie Granola

This sweet and crunchy oatmeal cookie granola is packed full of wholesome ingredients! Now you can eat "cookies" for breakfast without feeling guilty!
Yield: 4-5 cups
  • 2¼ c. old-fashioned rolled oats
  • 1 c. unsweetened flaked coconut*
  • ⅓ c. chopped pecans
  • ⅓ c. flax seed meal
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. salt
  • ¼ c. brown sugar, packed
  • ¼ c. pure maple syrup
  • ¼ c. peanut butter (Peanut Butter & Co. Cinnamon Raisin Swirl)
  • 2 tbsp. butter or coconut oil
  • 2 tsp. vanilla extract
  • ½ c. raisins
  1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper or a baking mat, set aside.
  2. In a medium size mixing bowl, combine the oats, coconut, pecans, flax seed meal, cinnamon, nutmeg, and salt.
  3. In a small microwave safe mixing bowl, whisk together the brown sugar, maple syrup, peanut butter and butter or coconut oil. Heat on HIGH for 30 seconds or until butter is slightly melted (the syrup will bubble, that's ok). Add the vanilla extract and whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients, toss to combine. Spread across the prepared baking sheet into an even layer. Place in the oven and bake for 30 minutes, stirring every 10 minutes (adding the raisins in the last 10 minutes). Remove and allow to cool completely before transferring to an airtight container.
*If you only have sweetened on hand, that's perfectly fine!
-For gluten-free: please make sure your oats are certified gluten-free.
-For dairy-free: sub equal amounts coconut oil for butter.
