Homemade Butterscotch Sauce

This homemade butterscotch sauce is everything! You'll never buy the store-bought kind again!!
Yield: 1 cup.
  • 4 tbsp. (1/2 stick) unsalted butter, cubed
  • 1 c. brown sugar (light or dark), packed
  • ½ c. + ¼ c. heavy cream, divided
  • 1½ - 2 tsp. vanilla extract
  • ½ tsp. sea salt
  1. In a medium size heavy-bottomed saucepan set over medium heat, melt the butter. Add the sugar, ½ c. of cream and salt and whisk until combined. Bring to a gentle boil and cook for about five minutes, whisking occasionally (it will bubble and thicken).
  2. Remove from heat and add the remaining cream, vanilla extract and salt. Stir to combine (test to see if you need to add more vanilla, it'll just depend on personal preference), then pour into a microwave-safe container. Allow to cool for 30 minutes before using (this will help thicken it as well). Cover with plastic wrap directly on the surface and store in the refrigerator for up to 2 weeks.
