Ingredients

  • 1 cup sugar
  • 1/4 cup molasses
  • 3/4 cup shortening
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 cup sugar for rolling

Instructions

  • Preheat the oven to 350. In the bowl of a stand mixer, beat together the sugar, molasses, and shortening. Add the egg, and mix until just combined.
  • In a medium bowl, whisk together the flour, baking soda, salt, ground ginger, and cinnamon. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  • For the dough into 1 1/2 inch balls, then roll in the sugar. Place the balls on a greased or parchment lined baking sheet, and bake 12 minutes. Remove from oven and let cool for 3-4 minutes before transferring to a wire rack to cool completely.
