These monster cookie dough energy bites are egg-free and packed full of protein! Great little post workout treats without all of the sugar!

Ingredients

  • 2/3 cup old fashioned rolled oats
  • 2 Tbsp flaxseed meal
  • 1/2 cup dry roasted peanuts
  • 1/2 cup natural creamy or chunky peanut butter
  • 2 Tbsp coconut oil melted
  • 2-3 Tbsp maple syrup (honey or agave)
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips and M&Ms combined

Instructions

  • Place the dry roasted peanuts, oats and flaxseed in the bowl of a food processor. Grind until the nuts are smooth and the oats are relatively fine. Remove and place into a medium size mixing bowl.
  • Add peanut butter, coconut oil, maple syrup, and vanilla. Stir until combined.
  • Carefully fold in chocolate chips and M&Ms. Store in an airtight container in the refrigerator for up to 5 days.

Notes

-Peanuts and peanut butter can be substituted for almonds and almond butter.
