Ingredients

For the Buffalo Chicken

  • 1 lb chicken breast boneless, skinless
  • 1/4 cup hot sauce
  • 1 Tbsp honey
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste

For the Salad

  • 8 cups romaine lettuce chopped
  • 3/4 cup shredded carrots
  • 3/4 cup celery diced ~ approx. 2 stalks
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/2 cup frozen corn defrosted
  • 1/2 cup blue cheese crumbles optional
  • blue cheese dressing optional

Instructions

  • In a gallon sized freezer bag add in the hot sauce, honey, and spices for the chicken marinade and use your hands to massage together to make the marinade. Then, add in the chicken and refrigerate for at least 1 hour or even overnight.
  • Once the chicken has marinated for an hour, preheat your grill and spray the grates with cooking oil to keep the chicken from sticking. Cook the chicken for about 6 minutes on each side until the internal temperature reaches 165 degrees Fahrenheit. Then let the chicken rest and prepare the salad.
  • In a large bowl, combine the lettuce, carrots, celery, bell pepper, corn, and avocado, and mix well
  • Next, slice up your chicken breasts and place them on top of the mixed salad along with the blue cheese crumbles.
  • Finally, serve with your favorite dressing and enjoy!
