In a small bowl combine the Paprika, Italian Seasoning, Garlic Powder, Salt and Pepper and mix well.
Next, brush both sides of each Mahi Mahi filet with olive oil.
Then, season both sides of each Mahi Mahi filet with the prepared seasoning mixture.
Heat your grill over medium-high heat and rub olive oil on your grill to keep the filets from sticking.
Cook each filet for 3-5 minutes on each side until the fish flakes with a fork.
Finally, serve and enjoy!

You can store this grilled mahi mahi in an airtight container in your fridge for 3-5 days. Since this recipe is so quick to make, I would not recommend freezing this dish.
