Ingredients

  • 30 ounce frozen shredded hash browns defrosted
  • 1/2 cup melted butter
  • 10 oz cream of chicken soup
  • 8 oz sour cream
  • 1/2 cup white onion finely diced
  • 2 cups cheddar cheese shredded
  • 1/4 tsp ground black pepper
  • chives optional garnish

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (177 degrees Celsius) and coat a 13×9 baking dish with non-stick cooking spray.
  • In a large bowl, combine all ingredients, saving ½ cup of cheddar cheese on the side for topping.
  • Place in your prepared dish and bake for 40 minutes.
  • After 40 minutes, remove from the oven and stir all ingredients around in the pan, then top with the reserved cheddar cheese and bake for another 5 minutes until the cheese has melted.
  • Remove from the oven to cool, add optional chives as a garnish, and then serve and enjoy!

Store this Cheesy Hash Browns Casserole in the refrigerator, covered, for up to 3-4 days. To FREEZE, just wrap it tightly and freeze for up to 2 months.
To REHEAT, thaw overnight in the refrigerator if frozen, then warm it in the oven at 350 degrees F (177 degrees Celsius) until heated through.
