Easy Mexican Pizzas Recipe

- 1 lb ground beef
- 1 packet taco seasoning
- 2 tbsp vegetable or canola oil
- 8 soft taco flour tortillas
- 1 (15 oz) can refried beans
- 2/3 cup red enchilada sauce
- 2 small tomatoes diced
- 1 (8 oz) block colby jack cheese
- 3 green onions sliced
Optional Toppings
- sliced olives
- green chiles
- minced cilantro
In a large skillet set over medium heat, brown beef and season.
Meanwhile in a small skillet set over medium-high heat, add the oil. Fry the flour tortillas just until golden brown, transfer to a paper towel lined plate.
Place four tortillas on a lined baking sheet. Spread tops with a layer of refried beans, then add the taco meat. Place the remaining tortillas over top, then spread with enchilada sauce and top with tomatoes, cheese, green onions (olives and green chilies if desired).
Place into the oven and broil until the cheese is bubbly and begins to brown. Remove and garnish with cilantro, if desired. Serve hot.
