- 3 cup flour
- 1 1/2 cup granulated sugar
- 1 1/2 cup butter or crisco
- 2 large eggs
- 1 tsp vanilla
- 2 tsp lemon juice
- 1 tsp baking soda
- 1/2 tsp salt
- zest of one lemon
- 1 (8 oz) bag lemonhead candies crushed
Icing
- 2 tsp lemon juice
- 1/2 cup powdered sugar
Preheat oven to 350 degrees.
In a mixing bowl, cream sugar, eggs and butter (or shortening) together. Add lemon juice and vanilla extract. Beat for 1 minute.
Stir in salt, baking soda, flour (add flour one cup at a time), lemon zest, and crushed Lemonheads.
Roll dough into 1-inch balls, flatten and bake on a pan lined with parchment paper for 10-12 minutes.
Let cool on pan for 3 minutes.
Transfer to cooling racks and prepare glaze by whisking together powdered sugar and lemon juice. Add additional powdered sugar if necessary. Use a spoon to drizzle lightly over cookies. Let cool.
