Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1/2 tsp lemon zest
  • 1 tbsp plain Greek yogurt
  • 1/2 tbsp red wine vinegar
  • 2 tbsp red onion diced
  • 2 cloves garlic minced
  • 1 tsp kosher sea salt
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/4 tsp coriander
  • 1/4 tsp ground black pepper
  • 1- 1 1/4 lb chicken breasts cubed into 1/2" pieces
  • 6 pitas

Optional Toppings

  • romaine lettuce
  • tomato diced
  • cucumber diced
  • red onion diced
  • pepperoncinis sliced
  • feta cheese
  • crispy chickpeas
  • Tzatziki
  • Hummus

Instructions

  • In a large mixing bowl or a ziploc bag, whisk together the olive oil, lemon juice, lemon zest, yogurt, vinegar, onion, garlic, thyme, oregano, paprika, coriander, and black pepper. Marinate at room temperature for 30 minutes to 1 hour OR place in the refrigerator to marinate for up to 24 hours.
  • Heat an indoor or outdoor grill, lightly brush the grates with a high heat oil such as canola or grapeseed. When the grill is hot, add the chicken and grill until the chicken reaches an internal temperature of 160 degrees. Remove from grill transfer to dish. Cover with foil and allow to rest for 5 minutes before using.
  • To assemble: Add your favorite toppings to the pita, wrap and serve.
