Pork Roast Recipe
Tender pork roast with baked apples and onions is simple yet decadent. It is easy to make and full of flavor.
- 1 (2lb) pork roast boneless
- 1/8 c olive oil
- 1 tbsp Italian seasoning
- 1 tsp garlic salt
- 1 tbsp fresh parsley chopped
- 2 large golden delicious apples cut into 1 inch wedges
- 2 large onions cut into 3/4 inch wedges
- 5 cloves garlic peeled
- 1 tbsp Italian Seasoning
Preheat the oven to 350°F and grease a large roasting pan.
In a small bowl whisk together olive oil, 1 tbsp Italian seasoning, garlic salt, pepper and thyme. Rub this mixture on all sides of the roast.
Heat up a large non stick skillet to medium high heat. Sear the roast on all sides to brown.
Place the browned pork into the roasting pan. Evenly arrange the apples, onions and garlic around the roast. Sprinkle with 1 tbsp Italian Seasoning.
Cook the roast for 25 minutes, then flip over the apples, onions and garlic. Cook for another 25 minutes or until the internal temperature of the pork is 145°F.
Remove the pork from the oven. Place a piece of tin foil over the roasting pan and let the roast sit for 10 minutes. Slice and serve.
