Pork Roast Recipe

Tender pork roast with baked apples and onions is simple yet decadent. It is easy to make and full of flavor.

Ingredients

  • 1 (2lb) pork roast boneless
  • 1/8 c olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic salt
  • pepper
  • 1 tbsp fresh parsley chopped
  • 2 large golden delicious apples cut into 1 inch wedges
  • 2 large onions cut into 3/4 inch wedges
  • 5 cloves garlic peeled
  • 1 tbsp Italian Seasoning

Instructions

  • Preheat the oven to 350°F and grease a large roasting pan.
  • In a small bowl whisk together olive oil, 1 tbsp Italian seasoning, garlic salt, pepper and thyme. Rub this mixture on all sides of the roast.
  • Heat up a large non stick skillet to medium high heat. Sear the roast on all sides to brown.
  • Place the browned pork into the roasting pan. Evenly arrange the apples, onions and garlic around the roast. Sprinkle with 1 tbsp Italian Seasoning.
  • Cook the roast for 25 minutes, then flip over the apples, onions and garlic. Cook for another 25 minutes or until the internal temperature of the pork is 145°F.
  • Remove the pork from the oven. Place a piece of tin foil over the roasting pan and let the roast sit for 10 minutes. Slice and serve.
