- 1 cup sugar
- 1/4 cup molasses
- 3/4 cup shortening
- 1 egg
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 cup sugar for rolling
Preheat the oven to 350. In the bowl of a stand mixer, beat together the sugar, molasses, and shortening. Add the egg, and mix until just combined.
In a medium bowl, whisk together the flour, baking soda, salt, ground ginger, and cinnamon. Gradually add the flour mixture to the wet ingredients and mix until just combined.
For the dough into 1 1/2 inch balls, then roll in the sugar. Place the balls on a greased or parchment lined baking sheet, and bake 12 minutes. Remove from oven and let cool for 3-4 minutes before transferring to a wire rack to cool completely.
