Ingredients

  • 8-10 long carrots peeled
  • 2 1/2 Tbsp Olive Oil
  • 1/4 cup Honey
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • Fresh Thyme optional garnish

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Peel carrots and cut into desired length, thickness.
  • Place the carrots in a baking dish and drizzle both the olive oil and honey over the carrots. Sprinkle on the salt and pepper and mix everything until evenly coated.
  • Bake the carrots from 40-60 minutes depending on your preference of doneness (40 minutes for more soft with a slight crunch and 60 minutes for completely soft carrots).
  • Garnish with fresh thyme leaves and a little salt and pepper and enjoy!
