- 1 bone-in, skin on chicken or turkey breast
- 2 tbsp. unsalted butter
- 1/2 tsp. each lemon zest and juice
- 1/2 tsp. coarse kosher sea salt
- 1/4 tsp. ground black pepper
- 1 tsp. freshly chopped herbs sage, thyme, rosemary, parsley
- 1 clove garlic, minced
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or foil.
Rinse breasts under cold water and pat dry with paper towels. Place on prepared baking sheet.
Gently separate the skin from the meat with your fingers. Spread the butter underneath and over the skin. Then spread the herbs and seasonings underneath and over the skin.
Place in the oven and roast for 30-45 minutes depending on the size. Use a meat thermometer to ensure doneness. It should read 155 degrees F.
Remove from the oven and cover with foil. Let it rest for 10 minutes before slicing and serving. This will allow it to come to the correct temperature and to seal in the juices.
