Loaded with pasta, grilled chicken, and crisp Romaine, Chicken Caesar Pasta Salad is tossed in creamy dressing and topped with parmesan. It’s a refreshing dish for lunch, dinner, or meal prep.
In a small food processor, combine all of the ingredients for the dressing. Process until smooth and creamy.
To make the salad, in a large mixing bowl, combine the pasta, chicken, tomato halves, lettuce, parmesan, salt, and pepper. Pour the dressing over the top and toss to combine. Refrigerate until ready to serve.

Notes
-I prefer a milder anchovy flavor, but for a stronger kick, blend a rinsed and dried anchovy fillet into the food processor with the dressing ingredients. To STORE this Caesar Chicken Pasta Salad, transfer leftovers to an airtight container. It will stay fresh in the fridge for up to 1-2 days. If you want to make it ahead, keep the Caesar salad dressing separate until serving to preserve the lettuce’s crispness. This recipe is not ideal for freezing due to the fresh vegetables and pasta, which can become mushy after thawing. If REHEATING, warm only the chicken and pasta before tossing with the salad.
