2crispy (original) chicken breastscut into 1-inch cubes
2grilled chicken breastscut into 1-inch cubes
2stalkscelerycut into 1/2-inch pieces
1/3cupsweet pickle relish
1/2cupmayonnaise(light or olive oil works fine)
2hard-boiled eggs
Additional Ingredients
green leaf or butter leaf bib lettuce
wheatberry bread or honey wheatberry bread
Instructions
In a large food processor, add the crispy chicken, grilled chicken, celery, mayonnaise, and sweet pickle relish. Pulse for 5 seconds.
Add the peeled boiled eggs to the processor. Pulse for an additional 10 seconds. Be careful not to over-process.
Serve immediately or refrigerate for up to 3 days.

-You can use store-bought chicken breasts from the frozen section and prepare them according to the package's instructions, or you can purchase chicken breast filets from your local Chick-fil-A. Chicken should be cooled completely prior to using (I refrigerate mine for at least 1 hour).To STORE the Chicken Salad, place it in an airtight container and refrigerate. For the bread, it’s best to store it separately to maintain freshness.If you want to FREEZE the chicken salad, you can freeze it in an airtight container for up to 1 month. When ready to eat, thaw in the fridge overnight and serve with fresh bread. To REHEAT, gently warm the chicken salad on the stove or microwave before assembling the sandwich.
