Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Chill a non-stick cookie sheet in the refrigerator for 15 minutes.
In the bowl of a stand mixer or in a large mixing bowl with a hand mixer, beat the butter on medium for 2 minutes. Add the powdered sugar, vanilla, almond extract, and salt. Beat for 2 additional minutes.
Add the egg and mix for 1 minute. Add the flour and mix just until combined.
Using a cookie press, press the dough onto the chilled cookie sheet, about 1 ½ inches apart. Sprinkle with sanding sugar, if desired.
Place in the oven and bake for 6–7 minutes. Remove from the oven and allow the cookies to cool for 5 minutes on the sheet before transferring them to a wire rack to cool completely.

Notes
STORE Halloween Spritz cookies in an airtight container at room temperature for up to 7 days to keep them fresh. For longer storage, place them in a single layer on a baking sheet and FREEZE until firm, then transfer them to a freezer-safe container or resealable bag. They will stay good in the freezer for up to 3 months. To REHEAT, let frozen cookies thaw at room temperature for 10–15 minutes. If you prefer them slightly warm, heat them in a 300 degrees Fahrenheit (150 degrees Celsius) oven for 3–5 minutes. Avoid microwaving, as it can make them soft instead of crisp.
