Early mornings get easier with French Toast Sausage Roll Ups in the lineup. Each roll turns crisp in the pan, filled with savory sausage and finished with a drizzle of maple syrup.

1/2tspground cinnamon

1tbspunsalted butter

Instructions
Set a large skillet over medium heat.
Use a rolling pin to flatten the slices of sandwich bread.
In a small dish, whisk the eggs, milk, cinnamon, and vanilla. Dip each piece of bread in the mixture, then place a sausage on the front edge of the bread. Tightly roll up, pressing to seal the end.
Place the butter in the preheated skillet. Once melted, add the rolls seam side down to the buttered skillet. Cook for 2 minutes (or until golden brown) on each side, then turn and cook for 2 minutes on 2 more sides.
Remove from the heat and serve with syrup and/or powdered sugar, if desired.
Notes
To STORE Sausage French Toast Roll Ups leftovers, let them cool completely, then place them in an airtight container. They’ll stay good in the refrigerator for up to 3 days. For longer storage, FREEZE them in a single layer on a baking sheet, then transfer to a freezer bag or freezer-safe container—good for up to 2 months.To REHEAT, microwave in 20-second intervals until warmed through, or place in a 350 degrees Fahrenheit (175 degrees Celsius) oven for 10–12 minutes until heated evenly. For frozen roll ups, let them thaw in the fridge overnight or add a few extra minutes to the reheating time.
