These Gooey Rice Krispie Treats are soft, buttery, and extra chewy, made with crispy rice cereal and mini marshmallows stirred in at the end for that perfectly melty texture.
50regularmarshmallows or 5 Cups miniature marshmallows
1 1/2cupsminiature marshmallows
4Tbspunsalted butter
pinch of salt
1/2teaspoonvanilla extract
Instructions
Prepare a 9×9-inch baking pan by buttering the sides and bottom; set aside.
In a large mixing bowl, add 6 cups of Rice Krispies cereal.
In a medium-sized saucepan over low heat, combine 4 tablespoons of unsalted butter and 50 regular marshmallows (or 5 cups of mini marshmallows). Stir continuously with a rubber spatula until the mixture becomes smooth and shiny. Remove from heat and mix in a pinch of salt and vanilla extract.
Pour the marshmallow mixture over the cereal, stirring to combine. Before the cereal is completely coated, add in 1½ cups of miniature marshmallows, allowing them to melt slightly but still remain fairly chunky.
Pour the mixture into the prepared pan and press with the spatula to create an even layer. Place in the refrigerator to chill for 10–15 minutes before cutting and serving.

-You can also make this recipe using Fruity Pebbles or Cocoa Krispies.STORE your Chewy Rice Krispies Treats in an airtight container or Ziploc bag at room temperature for up to 3 days. For longer storage, place them in the refrigerator for up to a week, but let them sit at room temperature for at least 30 minutes before serving so they can soften up a bit. To FREEZE, wrap individual squares tightly in plastic wrap and place them in a freezer-safe bag or container. They’ll keep well for about 2 months.
