Heat the grill (or a grill pan) to medium-high heat.
Brush the peach halves with oil and place them on the grill for 3 minutes, then rotate them 90 degrees to continue to cook for an additional 3-4 minutes or until the peaches start to caramelize.
Meanwhile, in a small saucepan, melt the butter and sugar until the sugar has dissolved. Remove and whisk in cinnamon.
Remove the peaches from the grill with a pair of tongs. Brush the butter mixture over top and sprinkle with sea salt.
Serve with a scoop of ice cream in the center of the fruit.

To STORE Grilled Peach leftovers, let them cool and place them in an airtight container in the refrigerator for up to 2-3 days. To prevent drying out, add a bit of butter when reheating. Peaches can be frozen in a single layer before transferring to a freezer-safe container, where they’ll last for up to 1 month.REHEAT gently on the stovetop or in the microwave until warmed through. For oven reheating, use low heat and check periodically. Add more butter before serving for moisture.
