Buttery garlic spread and melted cheese make Homemade Cheesy Garlic Bread an easy side that works with slow-cooked meals, quick weeknight dinners, and everything in between.
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Using a large bread knife, slice the bread in half lengthwise. Cut two sheets of foil about 24 inches long and place them on a baking sheet, side by side. Place the bread on top of the foil.
In a medium mixing bowl, using a spatula, mix the butter, olive oil, garlic, Italian seasoning, garlic powder, and salt together until smooth and creamy. Spread the mixture over both bread halves. Wrap the foil over the sides of the bread and crimp, then roll up the ends of the foil. Place in the oven and bake for 10 minutes.
Remove from the oven, open the foil, and roll it down around the edges of the garlic bread. Sprinkle with half of the parmesan, then all of the mozzarella. Finish with the remaining parmesan.
Return to the oven and bake uncovered for 6 minutes, or until the cheese is melty and begins to brown. Remove from the oven and sprinkle with additional parmesan (if desired) and parsley. Slice and serve immediately.

Make this in advance and refrigerate for up to 2 days.
Keep the bread warm by re-wrapping it after baking and placing it in a 200 degrees Fahrenheit (95 degrees Celsius) oven for up to 30 minutes.
