Peel carrots and cut into the desired length and thickness.
Place the carrots in a baking dish.
Drizzle both the olive oil and honey over the carrots. Sprinkle on the salt and pepper and mix everything until evenly coated.
Bake the carrots for 40–60 minutes, depending on your preferred doneness (40 minutes for softer carrots with a slight crunch, or 60 minutes for completely soft carrots).
Garnish with fresh thyme leaves and a little extra salt and pepper. Serve and enjoy!

Freezing this dish is not recommended.To REHEAT, use a microwave for the best results, stirring occasionally for even heating, or warm them in a pan over medium-low heat, stirring gently until heated through.
