Microwave Peanut Brittle is the easiest way to make homemade candy without hassle. No candy thermometer needed—just a few ingredients, a microwave, and minutes for the perfect crunchy, nutty treat.
Line a quarter or half sheet pan with parchment paper or a silicone baking mat; set aside.
In a 2-quart or larger microwave-safe glass mixing bowl, combine the sugar and corn syrup. Microwave on HIGH for 4 minutes.
Mix in the peanuts, then microwave on HIGH for 3 minutes.
Mix in the butter, vanilla, and salt. Microwave on HIGH for 10 minutes. Whisk in the baking soda and quickly pour onto the prepared baking sheet. Spread into a thin layer.
Let cool at room temperature for 1 hour until cool and set. Break into pieces and store in an airtight container.

-If your microwave is 1000 watts, follow the recipe as written. Lower wattage may require adding a minute or so to Step 4, while higher wattage may need about a minute less.-I have not tried doubling this recipe, but I prefer making two batches. If you do, I recommend using a 4-quart bowl.Once cooled and broken into pieces, STORE the Microwave Oven Peanut Brittle in an airtight container at room temperature. It will maintain its crispness for up to 2 weeks.For extended storage, you can FREEZE the brittle pieces in a freezer-safe bag or container, separating layers with parchment paper to prevent sticking. Freeze for up to 2 months.To enjoy, allow the brittle to thaw at room temperature; reheating is not necessary, as it may cause the candy to become sticky or lose its crunch.
