Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Pour the melted butter into a 9x13 baking dish. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, and mix until combined. Pour the batter over the melted butter, but do not stir.
Add the sliced peaches, sugar, and lemon juice to a medium saucepan. Bring the mixture to a simmer over medium heat, stirring constantly. Pour the peach mixture over the batter, and again do not stir. Sprinkle with the cinnamon.
Bake 40–45 minutes, until the cobbler is golden brown and the peach filling is bubbling. Serve warm.
Notes
STORE leftover peach cobbler loosely covered with plastic wrap in the refrigerator once it has completely cooled. Since this is a cooked fruit dessert, it will stay fresh for about 2–3 days.To FREEZE, let the cobbler cool completely, then wrap it tightly with foil and place it in a freezer-safe container. It will keep in the freezer for up to 2 months. Thaw overnight in the fridge before baking. To REHEAT, warm the cobbler in the oven at 350 degrees Fahrenheit (175 degrees Celsius) for about 20 minutes, or until heated through. Cover with foil if the top begins to brown too much. For individual servings, microwave for 30–45 seconds until warm.
