Instructions
Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius) and grease a large roasting pan.
In a small bowl, whisk together olive oil, 1 tablespoon Italian seasoning, garlic salt, pepper, and thyme. Rub this mixture on all sides of the roast.
Heat a large nonstick skillet over medium-high heat. Sear the roast on all sides to brown.
Place the browned pork into the roasting pan. Evenly arrange the apples, onions, and garlic around the roast. Sprinkle with 1 tablespoon Italian seasoning.
Cook the roast for 25 minutes, then flip the apples, onions, and garlic. Cook for another 25 minutes or until the internal temperature of the pork reaches 145 degrees Fahrenheit (63 degrees Celsius).
Remove the pork from the oven. Place a piece of tin foil over the roasting pan and let the roast sit for 10 minutes. Slice and serve.

To STORE leftover pork roast, place sliced pork and roasted apples, and onions into an airtight container and refrigerate for 3 to 5 days. If you’d like to FREEZE it, let the pork cool completely, then wrap it tightly in foil or place it in a freezer-safe bag or container. It will keep well in the freezer for up to 3 months.When REHEATING, thaw overnight in the fridge if frozen, then warm the pork in a covered dish in the oven at 300 degrees Fahrenheit (149 degrees Celsius) until heated through. You can also microwave individual portions until warmed through, though the texture of the apples may soften more.
