Preheat your oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.
Rinse the potatoes and cut them into 1-inch cubes.
Add the potatoes, oil, salt, pepper, oregano, and taco seasoning to a medium bowl and toss until everything is coated.
Place the potatoes on a rimmed baking sheet and bake in your preheated oven for 15 minutes.
Meanwhile, add the green beans to the same mixing bowl (no need to rinse it out) along with the oil, garlic, and salt and toss everything together.
Then, remove the potatoes from the oven, add the green beans onto the baking sheet and bake everything for another 15-20 minutes until vegetables are soft.
Finally, serve hot and enjoy!

You can store leftovers of these green beans and potatoes in an airtight container in your fridge for 3-4 days. I would recommend not freezing this dish because the textures will come out grainy once thawed.To reheat you can do so in the microwave or in a pot on the stovetop until everything has warmed through. I would recommend adding a splash of water or chicken broth to keep the vegetables from drying out.
