This boldly flavored Roasted Red Pepper Hummus is smooth, creamy and makes a scrumptious dip or spread. The best part is that it all comes together in less than 10 minutes!
In the bowl of a food processor combine the lemon juice and tahini for 1 minute then scrape down the sides.
Next, add in the olive oil, garlic, cumin, and salt and combine for about 30 seconds.
Then add in the chickpeas, half at a time and blend together until smooth, then scrape down the sides.
Add in the roasted peppers and continue to process until smooth.
If the hummus is too thick or not to your desired consistency, then you can add in a Tablespoon or two of water.
Next, place the hummus in a serving bowl and chop up additional red peppers to add to the top, serve, and enjoy!
