Preheat your oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper or silicone mats and set aside.
In a bowl of a stand mixer add the softened butter and sugars and beat until soft and fluffy.
Next, add the eggs and vanilla and mix until combined.
Then, add the flour, cocoa powder, baking soda, and salt and mix until a dough forms.
Add 2 cups of chocolate chunks and fold them into the cookie dough.
Next, using a 1 Tbsp size cookie scoop, scoop cookie dough balls and place them onto the prepared baking sheets.
Use the extra ½ cup of chocolate chunks and place chocolate chunks all over the top of the cookie dough balls.
Bake in the oven for 8-10 minutes until done then set aside to cool.
Finally, serve and enjoy!

You can store any leftovers of these dark chocolate chip cookies in an airtight container on your counter at room temperature for 4-5 days. For longer storage you can store them in your refrigerator for up to 1 week or freeze them in your freezer for up to 3 months.
