Who knew you could make Flourless Peanut Butter Cookies with just 8 ingredients? These little bites of peanut butter heaven are chewy, soft, and totally irresistible!
1cupsemi-sweet chocolate chips, peanut butter chips or mini peanut butter cups (or a combination)
Instructions
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line baking sheets with parchment paper or a Silpat mat.
In a large bowl, mix together the peanut butter, sugar, brown sugar, egg, baking soda, vanilla, and salt until well blended. Stir in the chocolate chips.
Scoop dough and place onto the prepared baking sheets. Flatten each cookie slightly with the palm of your hand.
Place in the oven to bake for 10-12 minutes. Remove and allow to cool on the baking sheet for 5 minutes (be patient and don't remove them too soon or they'll fall apart) before transferring to a wire rack to cool completely.
Notes
-These cookies are naturally gluten-free. To make them dairy-free, simply omit the chocolate chips and peanut butter cups or substitute them with peanuts or dairy-free chocolate chips.To STORE these cookies, place them in an airtight container at room temperature for up to one week. For longer storage, arrange the cookies in a single layer separated by parchment paper in a freezer-safe container and freeze for up to three months.To enjoy after freezing, allow the cookies to thaw at room temperature; if desired, warm them in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for 5 minutes to refresh their softness.
