There’s no better way to start your day than with Healthy Baked Apple Oatmeal. Filled with apples, oats, and cinnamon, it’s a nutritious breakfast that’s simple and satisfying.

Instructions
Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius). Grease an 8x8-inch or a 9x9-inch baking dish with butter, and set aside.
In a medium-sized mixing bowl, combine the dry ingredients: oats, brown sugar, ½ cup of nuts, baking powder, cornstarch or flour, cinnamon, apple pie spice, and salt. Mix until combined. Pour in the butter and stir.
In a small mixing bowl, whisk together the wet ingredients (eggs, milk, and vanilla). Pour the milk mixture into the oat mixture, using a rubber spatula to stir and evenly combine.
Place the apples in the bottom of the buttered baking dish. Pour the mixture over the apples and spread it into an even layer. Sprinkle the remaining ½ cup of nuts over the top.
Cover and refrigerate overnight, or bake immediately.
Place in the oven and bake for 40-50 minutes or until the top is golden brown and set. Remove from the oven and allow to cool for 20 minutes before serving. This will allow the juices to thicken.

STORE Baked Oats in the fridge in an airtight container for 3-5 days. For longer storage, FREEZE individual portions in mini muffin tins, then transfer them to an airtight container or freezer bag. You can also wrap the portions in plastic wrap or foil before freezing.When ready to eat, thaw and REHEAT in the microwave, adding a splash of milk to restore moisture and loosen the texture.
