3/4cupoat flour(about 1 1/4 c. of regular oats blended)
3/4cupold-fashioned oats
2tbspflax seed blendWe like Barlean's Flax Chia Coconut Blend
3/4tspbaking soda
1/2tspground cinnamon
1/8tspkosher sea salt
1/2cupcoconut oilmelted
1/4cuplight brown sugar
2tsppure vanilla extract
1egg
For the Cream
1(8 oz) blocklow-fat cream cheese
1/3cupplain yogurtWe like Stonyfield Whole Milk Plain Yogurt
1cuppowdered sugar
1tspvanilla extract
For the Fruit
4cupmixed fruitfresh, washed and sliced if needed
Instructions
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a medium mixing bowl, whisk together the oat flour, oats, blend, baking soda, cinnamon, and salt. In a separate bowl, whisk together the coconut oil, sugar, vanilla, and egg. Pour the wet ingredients into the dry ingredients, stirring until combined. Cover and place in the freezer for 10 minutes to firm up.
Press the dough into the bottom of a 9 to 13-inch round pan lined with parchment paper. It can be any pan you have! Place in the oven and bake for 10 minutes, then remove and allow to cool.
In a medium mixing bowl, using a stand mixer or hand mixer, beat the cream cheese until fluffy, about 1 minute. Add the yogurt, powdered sugar, and vanilla and mix until smooth. Spread over the cooled crust, leaving about a 1/2-inch border. Top with fresh fruit and serve immediately.
Notes
-You can easily swap the blend out for ground flaxseed or omit it completely.-You can cut back on the powdered sugar to 1/2 cup for a less sweet topping.STORE Healthy Fruit Pizza leftovers in an airtight container in the fridge for up to 2 days. The crust may soften, but the flavors will remain delicious.
