This Healthy Buffalo Chicken Salad is fresh, flavorful, and satisfying with spicy grilled chicken, crisp vegetables, and a creamy dressing. Best of all, it’s ready in about 35 minutes.
In a gallon-sized freezer bag, add the hot sauce, honey, and spices for the chicken marinade. Use your hands to massage everything together to create the marinade. Then, add the chicken and refrigerate for at least 1 hour or even overnight.
Once the chicken has marinated for an hour, preheat your grill and spray the grates with cooking oil to prevent the chicken from sticking. Cook the chicken for about 6 minutes on each side until its internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius). Let the chicken rest while preparing the salad.
In a large bowl, combine the lettuce, carrots, celery, bell pepper, corn, and avocado, and mix well.
Slice up the chicken breasts and place them on top of the mixed salad along with the blue cheese crumbles.
