Buffalo Chicken Salad

This Buffalo Chicken Salad recipe is filled with fresh greens, vegetables, and topped with a flavorful buffalo marinated chicken breast!

A salad the whole family will love

Something about a salad places me on a patio in perfectly warm weather. Mixing that with a cool crisp salad and a cold drink, nothing feels more like summertime. This Buffalo Chicken salad has become a new staple in our household. We love buffalo chicken and putting it on top of a fresh salad compared to pairing it with the typical French fries makes this momma very happy! I also love that I can marinate the chicken in only an hour and it will hold all of that delicious buffalo favoring!

How to make Buffalo Chicken Salad

Ingredients for buffalo chicken salad

In a gallon sized freezer bag add in the hot sauce, honey, and spices for the chicken marinade and use your hands to massage together to make the marinade. Then, add in the chicken and refrigerate for at least 1 hour or even overnight.

Once the chicken has marinated for an hour, preheat your grill and spray the grates with cooking oil to keep the chicken from sticking. Cook the chicken for about 6 minutes on each side until the internal temperature reaches 165 degrees Fahrenheit. Then let the chicken rest and prepare the salad.

In a large salad bowl, combine the lettuce, carrots, celery, bell pepper, corn, and avocado, and mix well.

Next, slice up your chicken breasts and place them on top of the mixed salad along with the blue cheese crumbles.

Storage and Reheating Info

You can STORE this recipe in your fridge for 3-5 days.

I would recommend storing the chicken separately to REHEAT in your microwave before having left overs. Of course the chicken will already be cooked through so you do not have to reheat your chicken if you don’t want to.

Ingredients

For the Buffalo Chicken

  • 1 lb chicken breast - boneless, skinless
  • 1/4 cup hot sauce
  • 1 Tbsp honey
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste

For the Salad

  • 8 cups romaine lettuce - chopped
  • 3/4 cup shredded carrots
  • 3/4 cup celery - diced ~ approx. 2 stalks
  • 1 red bell pepper - diced
  • 1 avocado - diced
  • 1/2 cup frozen corn - defrosted
  • 1/2 cup blue cheese crumbles - optional
  • blue cheese dressing - optional
