Instructions
Using a wooden spoon, hand mixer, or the bowl of a stand mixer, mix Country Crock Spread, granulated sugar, light brown sugar, egg, egg yolk, vanilla, and lemon extract in a large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended (the dough will be soft and creamy). Add your favorite mix-ins (or use the ones listed above), fold with a spatula until every spoonful of dough has some of the mix-ins.
Drop dough by rounded tablespoonfuls (or to achieve a more uniform look, use a large cookie scoop or ice cream scoop), on ungreased baking sheets 3-inches apart.
Place in oven and bake at 350 degrees Fahrenheit (177 degrees Celsius) for 10 to 12 minutes or until edges are lightly golden. Remove from the oven and allow to cool for 1 minute on a wire rack; remove from the sheets and cool completely.

-You can mix almost anything into this base—there are so many ways to make it your own!-To make bars, line a 9x13-inch pan with foil, leaving a 2-inch overhang on the short ends. Press cookie dough evenly into the pan and bake for 18 to 25 minutes, or until lightly golden. Cool in the pan on a wire rack for 10 minutes. Use the foil overhang to lift the bars out and let them cool completely on the rack.Once cooled completely, STORE Coconut Lemon Cookies in an airtight container at room temperature for up to 5 days. If you want to make them last longer, they freeze well—place them in a single layer on a baking sheet, FREEZE until firm, then transfer to a freezer-safe bag or container. They’ll stay fresh for up to 2 months.To enjoy again, let them thaw at room temperature or REHEAT them in the microwave for 10–15 seconds for that fresh-from-the-oven feel.
