Indulge in comfort food with this Poppy Seed Chicken Casserole. Savory chicken coated in a creamy sauce and topped with a crunchy cracker and poppy seed topping.
Bring a large pot of water to a boil. Once boiling, add in the chicken breasts and cook for 15-25 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Place the chicken in a stand mixer and shred the chicken. You can also use 2 forks to shred the chicken.
Next, add the sour cream, and cream of chicken soup into the shredded chicken and mix until everything is well combined.
Add the chicken mixture to a 9x13 pan and spread it out evenly in the pan.
Then, add the Ritz crackers to a zip top bag and use a rolling pin or your hands crush the crackers until crumbled.
Add the Ritz crackers and melted butter into a bowl and mix until combined.
Pour the Ritz cracker mixture on top of the chicken and spread evenly across the dish.
Evenly sprinkle the poppy seeds on top of the crackers, if using.
Bake in the oven for 20-30 minutes until the crackers are golden brown and the chicken is bubbly.

For longer storage you can freeze this casserole in your freezer for up to 2 months.To reheat, thaw overnight in the fridge then reheat in the oven at 300 degrees or in your microwave until everything has warmed through.
