How to Make Poppy Seed Chicken Casserole
Step 1: Preheat your oven to 350 degrees Fahrenheit.
Step 2: Bring a large pot of water to a boil. Once boiling, add in the chicken breasts and cook for 15-25 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

Step 3: Place the chicken in a stand mixer and shred the chicken. You can also use 2 forks to shred the chicken.

Step 4: Next, add the sour cream, and cream of chicken soup into the shredded chicken and mix until everything is well combined.

Step 5: Add the chicken mixture to a 9×13 pan and spread it out evenly in the pan.

Step 6: Then, add the Ritz crackers to a zip top bag and use a rolling pin or your hands crush the crackers until crumbled.

Step 7: Add the Ritz crackers and melted butter into a medium bowl and mix until combined.

Step 8: Pour the Ritz cracker mixture on top of the chicken and spread evenly across the dish.

Step 9: Evenly sprinkle the poppy seeds on top of the crackers, if using.

Step 10: Bake in the oven for 20-30 minutes until the crackers are golden brown and the chicken is bubbly.
