Squeeze in some fun this summer with Raspberry Lemonade! Fresh raspberries, lemon, and a little sweetness come together to make the most refreshing drink.
Place raspberries in a food processor and pulse until well pureed. Pour the raspberry puree through a fine mesh strainer into a bowl; set aside.
Pour 1 cup of water into a medium-sized saucepan over medium-high heat, then stir in the sugar. Continue cooking over heat until the sugar is dissolved and the liquid turns from cloudy to clear.
Remove from the stovetop, and pour into a large pitcher or jug. Allow it to cool for 15 minutes before stirring in the puree, remaining water, and lemon juice. Stir to combine. Refrigerate for at least 30 minutes before serving. Serve with fresh raspberries, lemon slices, mint, and ice.

*You can swap out the 4 cups of water for a liter of sparkling water. Remove the mixture from the stovetop, allow it to cool, then add the raspberry puree and lemon juice. Add cold sparkling water right before serving, and mix to combine.STORE this in a pitcher in the fridge for about a week. To make this lemonade into a frozen version, pour some of the lemonade into an ice cube tray and let it solidify. Then, place a cup or two of the cubes into a blender and add more lemonade until you reach your desired consistency.
