Everyone will love these Smothered Potatoes. Fluffy potatoes combined with sliced onions and coated in a savory sauce to create a delicious side dish that pairs with any meal!
1medium yellow onionsliced 1/8 inch thick and cut into half moons
1/4cupvegetable broth
2cloves garlicminced
1tspsalt
1/2tspblack pepper
fresh parsleyoptional garnish
Instructions
In a skillet over medium-high heat add in the vegetable oil.
Once the oil is hot add the sliced potatoes and onions. Cover the skillet and frequently check them to flip. You want a nice golden brown color but don't want to burn them. About 10 minutes.
Next, pour in the broth, cover again and let the potatoes simmer.
Then add in the salt, pepper, and garlic and cook until the potatoes are fork tender.
Finally, remove from heat, garnish with chopped parsley serve and enjoy!

You can store any leftovers of these smothered potatoes in an airtight container in your fridge for about 4 days.To reheat you can do so in a skillet over medium heat with a splash of broth until everything has warmed through. You can also reheat in the microwave until everything has warmed through.
