Everyone will love these Smothered Potatoes. Fluffy potatoes combined with sliced onions and coated in a savory sauce to create a delicious side dish that pairs with any meal!

These Smothered Potatoes are a warm and comforting side dish that everyone is sure to enjoy. The potatoes are sliced or and cooked slowly in a skillet until they become soft on the inside and slightly crispy on the outside, giving them the best texture. These potatoes are “smothered” with sautéed onions and cooked in vegetable broth to give it a strong savory flavor.

My family loves eating these potatoes at breakfast alongside my Mini Pancakes, Easy Sausage Cheese balls, and Healthy Breakfast Fruit Pizza.

Potatoes – The base for this savory side dish giving it that classic starchy taste.

Onions – Fresh onions are cooked with the potatoes until they are beautifully caramelized.

Vegetable Broth – A savory broth for the potatoes and onions to cook in and soak up all the flavor.

Variations

Broth – I use vegetable broth for these potatoes but you can use chicken broth, beef broth, or any broth you prefer.

Potatoes – I would recommend using russet potatoes or Yukon gold potatoes but you can also use a red potato or even fingerling potatoes, you might just have to adjust the cooking time.

Oil – I recommend using vegetable oil but you can also use olive oil, canola oil, or even butter if you prefer.

How to Make Smothered Potatoes

Step 1: In a skillet over medium-high heat add in the vegetable oil.

Step 2: Once the oil is hot add the sliced potatoes and onions. Cover the pan and frequently check them to flip. You want a nice golden brown color but don’t want to burn them. About 10 minutes

Step 3: Next, pour in the broth, cover again and let the potatoes simmer.

Step 4: Remove the lid and add in the salt pepper and garlic and cook until the potatoes are fork tender.

Step 5: Finally, remove the potato mixture from the heat, garnish with chopped parsley serve and enjoy!

What other spices can I add to these smothered potatoes?

If you are wanting to add more flavor into these potatoes I would recommend adding garlic powder, onion powder, paprika if you are wanting a smoky flavor, or even Cajun seasoning.
