Preheat your oven to 350 degrees Fahrenheit and grease a 9x5 loaf pan.
In a bowl mix together the sugar and oil.
Next, add the eggs and mix together.
In a separate bowl add the flour, baking soda, cinnamon, nutmeg, and salt and whisk together.
Add the dry ingredients and water into the egg and sugar mixture until everything has combined.
Next, fold in the sweet potato and pecans, if using.
Pour the batter into your prepared loaf pan.
Optional Step: Place 2 tbsp of softened butter in a zip top bag and cut a small hole on the corner. Then draw a straight line on the top middle of your batter with the butter before putting the pan in the oven. This will ensure a straight crack or bloom when the bread bakes.
Bake in the oven for 1 hour or until a toothpick comes out clean. Sometimes this takes 1 hour and 15 minutes depending upon your oven.

You can store leftovers of your sweet potato bread in an airtight container on your counter at room temperature for up to 3 days. You can store it in your fridge for 1 week. If you want to freeze it you can wrap it in plastic wrap and foil and freeze for up to 2 months.
