How to Make Sweet Potato Bread
Step 1: Preheat your oven to 350 degrees Fahrenheit and grease a 9×5 inch loaf pan.
Step 2: In a large bowl mix together the white sugar and oil.

Step 3: Next, add the eggs and mix together.

Step 4: In a separate bowl combine flour, baking soda, cinnamon, nutmeg, and salt and whisk together.

Step 5: Add the dry ingredients and water into the wet ingredients and mix until everything has combined.

Step 6: Next, fold in the sweet potato and pecans, if using.

Step 7: Pour batter into your prepared loaf pan.

Step 8: Optional Step: Place 2 tbsp of softened butter in a zip top bag and cut a small hole on the corner. Then draw a straight line on the top middle of your batter with the butter before putting the pan in the oven. This will ensure a straight crack or bloom when the bread bakes.

Step 9: Bake in the oven for 1 hour or until a toothpick comes out clean. Sometimes this takes 1 hour and 15 minutes depending upon your oven.

Step 10: Finally, serve and enjoy!

FAQs
There is an optional addition of chopped pecans but you can also use other nuts, or even chocolate chips to make a sweeter bread. If you are wanting to add more flavor into this loaf I would recommend adding a teaspoon of vanilla, or even swapping out granulated sugar for brown sugar to give it a taste with more molasses.
Some things I would recommend serving with this bread would be Healthy Breakfast Fruit Pizza, Hash Brown Egg Cups, or even a cup of coffee or tea.
Storage Information
You can store leftovers of your sweet potato bread in an airtight container on your counter at room temperature for up to 3 days. You can store it in your fridge for 1 week. If you want to freeze it you can wrap it in plastic wrap and foil and freeze for up to 2 months.
