For those of you who have followed along for quite some time now, you know I LOVE breakfast but struggle with finding the time to make something other than eggs or pancakes in the morning. I’m sure I’m not alone. Sometimes my kids get a bowl of Cheerios and a banana and we call it good. Today though, I wanted to share something extra special that we made recently: breakfast banana splits. They’re healthy, wholesome and perfect for packing up or eating in.

These were so fun to make! Not only that, but we had a blast eating them too. My kiddos giggled the entire time because they thought they were getting a “treat” for breakfast. We started by grabbing some yogurt (we really love using Stonyfield double cream or their flavored tubes), granola (sky’s the limit, you stick with one kind, or go crazy and do a mix of vanilla granola and chocolate granola), fresh fruit, mini chocolate chips, and of course, sprinkles.

Thanks to the Learning Tower, my sous chef was able to help me prep and assemble each individual bowl. Whenever I’m in the kitchen, he’s always eager to get in on the action. The Original Learning Tower from Little Partners allows him (and my youngest) to be independent AND safe, while I prep, bake and cook. They absolutely love using it, and I love that they’re entertained and happy- it makes time spent in the kitchen fun for everyone! He was a pro at cutting out those strawberry hearts!

If you’re packing this up to take on the go, you can use a rectangular container, and actually split your bananas in half, but since we were eating ours at home, we grabbed some bowls and sliced up the bananas (also so much easier for our little ones to eat). Layer them however you please, just don’t forget a pinch of sweetness on top, whether that’s coconut, chocolate chips, chocolate almonds, sprinkles or candy coated sunflower seeds.

Ingredients
  • Yogurt (plain, vanilla, coconut, strawberry, cherry, chocolate etc.)
  • Bananas
  • Strawberries
  • Kiwi
  • Granola
  • Mini chocolate chips
  • Rainbow sprinkles or chocolate covered sunflower seeds
Directions
  1. Add a little of each to individual bowls.
  2. These should be eaten the same day they are made.
  3. To make them extra special, you can always add a dollop of freshly whipped cream and a cherry on top!
Notes
-You can use whatever yogurt, granola and fruit you have on hand!
