I first tried this Bell Pepper and Cucumber Salad recipe back in 2023 when it went viral and I fell in love. Fresh crisp vegetables with an Asian flavored sauce to create an exceptional snack right at your fingertips. One of the best parts is that this recipe is so easy to make by simply tossing everything together in a bowl.

Recipe Ingredients

Mini Cucumbers – To give it that crunchy texture for this vegetable salad.
Ginger Dressing – I love the sweet and tangy flavors of the sesame ginger dressing that ties everything together.
Everything Bagel Seasoning – Filled with sesame seeds, poppy seeds, dried garlic, dried onion, and salt, to create a delicious blend of spices.

Why I Love This Salad
You only need 5 simple ingredients to create this colorful salad.
It is filled with fresh veggies making it a guilt-free snack.
It only takes 10 minutes to put together.
Variations
Peppers – I like using the small sweet peppers or mini bell peppers for this recipe because of their size and flavor. However, you can also use traditional bell peppers as well.
Cucumbers – Mini cucumbers or Persian cucumbers are crunchier in my opinion which is why I like them for this salad. With that being said, you can also use traditional English cucumbers instead if you prefer.
Spice – This recipe is very mild, but for a spicy kick you can add in some red pepper flakes or chili peppers to increase the heat.
Fresh Herbs – If you are wanting to add in some fresh herbs to this recipe I would recommend adding in fresh dill.
How to Make Bell Pepper and Cucumber Salad
Step 1: Slice your cucumbers and sweet mini peppers into bite sized pieces, roughly ¼ in thick.

Step 2: Next, add all the ingredients into a large bowl and mix.

Step 3: Finally, serve and enjoy!

FAQs
For additional vegetables I would recommend adding red onion, green onions, grape tomatoes or cherry tomatoes.
You don’t have to use the chili oil if you do not prefer it or cannot find it in your grocery store. Alternative options I would recommend would be soy sauce, sesame oil, avocado oil, coconut aminos, or even a splash of rice vinegar.
Storage Information
You can store this Bell Pepper and Cucumber salad in an airtight container in your fridge for 2-3 days. However, if you store the dressing separately from the chopped veggies it will last 4-5 days.
