These Smoked Cheddar Fajita Quesadillas are a bold, flavor-packed twist on a classic, combining gooey cheese, tender strips of seasoned chicken, sautéed peppers, black beans, and onions, all tucked inside a crispy, golden tortilla.

How to Make Smoked Cheddar Fajita Quesadillas

Step 1: In a medium skillet set over medium-high heat, add 1 tablespoon of oil. When the oil is hot, add the pepper and onion. Sauté until tender, about 8-10 minutes. You may need to add a little water to prevent them from drying out and burning.

Step 2: Remove from skillet and set aside. Wipe the skillet out and add the remaining oil. Fold tortillas in half. Place two in the pan side by side, folded edges about 1 inch apart. Stuff with cheese, peppers, onion, black beans, and chicken.
